Sausage and Pepper Bake
1 ˝ lbs. bulk Italian sausage, cut into 1" pieces
4 medium red bliss potatoes, cut into 1" chunks
2 green or red peppers, cut into 1" chunks (mix red, green and yellow for some color)
1 medium onion, cut into 8 wedges
3 to 4 cloves garlic, minced
1/8 c olive or vegetable oil
In a 13 x 9 x 2" baking pan, combine all ingredients. Drizzle oil over all then sprinkle with garlic. Bake uncovered at 375 degrees for 1 hour, stirring
after 30 minutes. Serve and top with grated Parmesan cheese. Yield: 4 to 6 servings.
