For A Tempting Tasty Turkey Dish

 Turkey Mint Rolls Recipe

INGEDIENTS:

 1tbl  Sesame oil

 2 garlic cloves minced

 1 med white onion shopped

 1lb of ground Turkey

 1tsp salt

 Freshly grounded white pepper

 1tsp  ground sage   

 1 bunch of fresh mint chopped

 1 package of pasta wrappers (Azumaya Brand 4" squares)

 1 stick of unsalted clarified butter

 

PREPARE:

In a large skillet or wok on high, heat sesame oil.  Add minced garlic and chopped onion and sauté until translucent. Then add ground turkey and brown, add salt, pepper and sage while browning.  Just when turkey is done (about 10min) add the chopped fresh mint, sauté for another two minutes. Remove from stove. Preheat oven to 350 degrees. Lay pasta squares flat on workstation and spoon ground turkey in center and flatten out.  Run clarified butter around perimeter of square.  Take two opposite points of the pasta square and join them in center.  Then take one of the remaining corners and roll pasta square.  Grease baking dish with Clarified butter, then place turkey rolls in pan and brush with clarified butter.  Now bake for 8-10 minutes or until golden brown, turn rolls over and bake for another 8-10 minutes so both sides are golden brown.  Remove from oven and cool.  Makes 10 rolls.

Mango Sauce

INGREDIENTS:

 1 Tlb extra-virgin olive oil

 1 ripe mango, peeled, pitted, and cut into small cubes

 Salt and freshly ground white pepper

 ¼ cup white wine

 1 tsp freshly squeezed lemon juice

PREPARE:

(for Mango Sauce)

Heat oil in a small pan over medium heat.  Add mango cubes, season with salt and pepper, and cook, until the mango is soft, around 3 to 4 minutes.  Add white wine and bring to a boil.  Remove from heat and stir in the lemon juice. Place mixture into blender and puree until smooth.  Chill until needed.

PRESENTATION:

I usually like serving the turkey rolls as a first course, and enjoy using chopstick at the table. I feel this makes for a more unusual and fun table setting; which is key for any dinner party.  I prepare the plates in the kitchen and serve when guest are seated at table. Make sure the table is properly set with mat, charger, chopsticks, napkin, wine and water glass in front of each chair. Take large dinner plate, Provence Lavender dinner plate by Haviland Limoges, as in photo, place large butter lettuce leaf on plate.  The lavender plate lends itself to a great contrast of color. Then take small dipping bowl in fill ¾ full with mango sauce and top with some fresh chopped mint and place on lettuce leaf. Cut turkey rolls on diagonal and arrange three to four pieces around dipping bowl.  Take some extra mango sauce and place in squeeze bottle, making a squiggly line in front of turkey rolls.  Place a sprig of mint between two of the rolls.  Ready to serve.  This can also be arranged on a large platter and served at a large group or party.
